Carrot, Tomato & Coriander Soup

This soup is really tasty and a lovely combination.
2 generous concentrate portions.

5 tomatoes should be put into a pan of boiling water and wait until the skin begins to split. Then take out, peel and cut open discarding the pips. Then proceed as follows:

Peel and roughly chop -
5 carrots
5 tomatoes (peeled and pipless)
Roughly 6 stems of Coriander
Enough boiling water to come half way up veg.

Either microwave or simmer the ingredients in a pan, until the carrots are soft enough to fork. Season with sea salt and black pepper to taste and pour into a liquidiser, or use a hand mixer until you have a smooth soup. (A tablespoonful of single cream can be added).

If you haven't got a processor, you can cook all the veg until they are very soft and then rub them through a fine nylon sieve.
